Baked Snapper

Servings: 1
Protein: 2
Carbohydrates: 6.5

  

  • 120gms snapper

  • 1 tsp vinegar

  • ½ cup broccoli

  • 1/8 cup onion

  • Lite or Celtic salt, pepper and paprika to taste

  •  Place the snapper on aluminium foil.  Cover with vegetables, sprinkle seasonings over the top.  Wrap, seal and bake at 200 to 220 degrees Celsius for about 25 minutes.

     

    Zucchini Tuna Casserole

    Carbohydrates: 6

     

  • 90mls cold water

  • Grated cheddar cheese (optional)

  • 60gms tuna

  • Parsley (optional)

  • 1 tbsp dehydrated onion flakes

  •  Preheat oven to 180 degrees Celsius.  Place cold water in blender and turn on medium speed.  Add SlimSafe powder while blender is on and blend well.  Set aside.  Cut zucchini in half lengthwise.  Scoop out center and dice.  Leave about 0.5cm thickness of zucchini to form the boat.  Mix the diced zucchini with the tuna, onion and seasonings, add the SlimSafe mixture and stir well.  Put mixture in zucchini boat and sprinkle with grated cheese.  Bake at 180 degrees Celsius for approximately 35 mins or until boat is soft.

     

     Tuna in Tomatoes

    Servings: 1
    Protein: 1
    Carbohydrates: 6.5

     

  • 60 grams Tuna in water

  • 1 tbsp mayonnaise

  • ¼ tsp dry or prepared mustard (sugar free Dijon)

  • 90mls cold water

  • ½ medium tomato

  • 1 lettuce leaf

  •  Combine first four ingredients in a small bowl and mix well.  Place  tomato on lettuce leaf and fill with tuna mixture.  Yummy for lunch.

     

    Lobster Almondine

    Servings: 1
    Protein: 1.5
    Carbohydrate: 3

     

  • 180gms cooked lobster
  • 1 tsp almond essence
  • 120mls hot water
  • ½ stalk celery
  • 90mls cold water
  • 1 SlimSafe sachet
  • 1 chicken stock cube
  • Lite or Celtic salt and pepper to taste
  •  

    Place cold water in blender and turn on medium speed.  Add SlimSafe sachet while blender is on.  Set aside.  In a small saucepan, dissolve chicken stock with almond essence.  Cook celery until soft.  Combine SlimSafe mixture with hot chicken stock and stir well to blend.  Pour entire mixture over cooked lobster and season with Lite or Celtic salt and pepper to taste.
